A Cupcake Emergency
This morning I slept in until 7:30 and then struggled all morning with extreme fatigue. I have battled fatigue my entire life, but over the last few months it’s gotten a lot better. Except for days like today . . .
It was late morning by the time I was sentient enough to tackle my job for the day, which was going over some questions the publisher had about my last literature curriculum. I had expected it to take several hours, but it wasn’t as bad as I had feared. I did have to haul the book out a couple of times to understand why I had said what I said. It was over a year ago!
I texted Robin to find out when and where I needed to deliver the mini cupcakes I had agreed to make for a bridal shower on Saturday. I was assuming they’d need to be done by Saturday morning—but they want them done by tomorrow morning! So my schedule was suddenly rearranged.
I had to go to Walmart this afternoon to get icing sugar and a couple other things. I still had our ladies’ night out to go to at suppertime. This month it was just me and my neighbor Sylvia and Michelle, another homeschool friend from back in the day. Both sweet ladies.
Once I got home, I threw on my apron and went to work zesting and squeezing lemons and making the batter for the cupcakes. I am patting myself on the back for springing for stand-alone cupcake liners:
Because they enabled me to bake 54 mini cupcakes at once. I can’t remember the exact count but I know it came to over 70 in total. I’ll be up first thing in the morning to ice and decorate them all. Which means I probably won’t make it back to Aldi until Saturday morning.
We still managed to watch our evening video, though Walter had to pause it while I took the second batch of cupcakes out of the oven.
